  1. In a large pot, pour in 2 litter of water, add a half teaspoon of salt, and a tablespoon of oil. Bring the liquid to a boil over high heat.

  2. Add the macaroni pasta, stirring occasionally, for 8 minutes, or until it is cooked but still firm to the bite. Drain the liquid and set it aside.

    Note: If you are unfamiliar with the brand of pasta. Please cook the elbow macaroni based on the package instructions. Set aside.
  3. In a large skillet over medium heat, heat the olive oil. Saute the onion for a few seconds, add the garlic, and saute until aromatic, then add the mushroom slices. Cook for 5 minutes, stirring, until the mushrooms are tender.

  4. Add the tomatoes and red pepper flakes and cook for another 5 minutes, stirring. Turn off the heat.

  5. Transfer it to a large mixing bowl and add the cooked macaroni, 12 ounces of cubed mozzarella, ¼ cup of Parmesan cheese, and the nutmeg. Mix well until combined.

  6. Prepare a 9 x 13 x 2-inch glass baking dish greased with softened butter. Transfer the mixture into the baking dish and scrape it evenly.

  7. Add grated cheddar cheese on top. If desired add dried oregano and chili flakes to give extra flavor. Bake it until the top is golden brown for 30 to 40 minutes.
