Preparation:
Gather all of the necessary ingredients, such as ginger strips, onion and garlic chops, red bell pepper, and spring onion.
Prepare the squid, remove the innards. Then slice the squid into bite-sized pieces, wash it and drain the water thoroughly.
Cooking:
Pour water into a large pot and add half of the strips of ginger. Bring it to a boil. Once it reaches its boiling point, add the squid slices, then blanch them for 1 minute. Rinse the squid in cold water after removing it from the blanching. Drain the water thoroughly.
Heat up vegetable oil in a pan or wok over a high flame. Stir fry the squid for less than a minute. Remove it from the heat. Set aside.
Note: Do not overcook the squid to avoid a very rubbery squid.In the same pan or wok over medium-low flame, saute the garlic until a bit toasted and aromatic, then add the ginger strips and the onion, and saute until soft. Next, add the bell pepper and saute for 30 seconds.
Stir in soy sauce, oyster sauce, squid ink, ground black pepper, sugar and water. Allow it to simmer for 2 minutes, or until the sugar is completely dissolved.
In a small bowl, mix cornstarch and water (cornstarch slurry). Pour it into cooking. Stir and let it simmer until the sauce becomes slightly thick.
Return the fan-fried squid to the pan or wok, add spring onion and cook for a minute, stirring constantly. Remove it from the heat and place it on a serving plate.
