Cleaning and Blanching:

  1. Prepare the pork rib by cutting it into 2 inch pieces. You may also use pre-cut pork ribs. Wash off the blood and drain it.

  2. Fill a pot with 4 to 5 cups warm water. Add sliced ginger, sliced green onion stem only, and cooking wine. Then stir.

  3. Turn on the fire and bring it to a boil. When it reaches the boiling point, remove the scum on it.

  4. Blanch the pork ribs for 4 to 5 minutes. Then drain it well.

  5. Wash it in warm water, then drain and set it aside.

Stir Frying:

  1. In a wok, heat 2 tablespoons of vegetable oil over high heat. Swirl the wok to coat it with oil.

  2. When the cooking oil is hot, gently add the pork spare ribs and stir fry them.

  3. Stir fry the pork ribs, allowing the oil to render and waiting for the color to change to light brown. Then remove it from the work and set it aside.

  4. In another wok, heat 2 tbsp. of cooking oil. Add 2 1/2 tbsp. of rock sugar. Stir it over low heat until it melts and turns a light brown color.

  5. Add the spare ribs and cook over medium to high heat. Continue stirring the ribs until the color changes.

  6. Add the sliced green onion, slice ginger, and the star anise. Continue to stir-fry until fragrant.

  7. Add soy sauce and Balsamic vinegar, stir. Then add 3 cups of hot water and ½ tsp. of salt. Stir it and cover the lid.

  8. Adjust the heat and simmer it for about 40 minutes or until spare ribs is tender.

  9. Open the lid and check the tenderness of the meat. Then add a tablespoon of soy sauce and vinegar. Adjust the tastes as necessary.

  10. Stir fry until the sauce becomes slightly thickened. Then add a tablespoon of sesame seeds.

  11. Stir-fry and toss the spare ribs in the sauce and its all done and ready to serve.
