Preparation:

  1. Clean the shrimps. Peel and devein them. Set it aside.

  2. Peel, mince, and cube the spices needed for the recipe.

  3. In a small bowl, make the batter by combining all-purpose flour, egg yolk, salt, ground black pepper, and water. Stir until the desired consistency is reached.

    Tips: Water should be added gradually until consistency is reached.
  4. Dredge the shrimp in cornstarch, then dip them in the batter mixture and fry them.

Frying:

  1. In a wok or skillet over medium-high heat, heat enough cooking oil to fry the shrimp.

  2. Fry the shrimp until it turns golden brown and crisp. Then remove from the wok and set aside.

The sauce:

  1. If you use the same wok, clean the wok and heat 3 tablespoons of cooking oil for sauteing.

  2. Saute the ginger for a few seconds, then add the garlic and saute until fragrant.

  3. Stir in the ketchup and soy sauce, then add pineapple juice from pineapple chunks in a can.

  4. Add sugar and 2 tablespoons of water. Stir and bring to a soft boil.

  5. Add the capsicums or bell peppers, the pineapple chunks, and the onion cubes. Stir.

  6. Add the slurry mixture and stir. Finally, add the vinegar and cook for about 1 minute before stirring.

  7. Toss the shrimp into the sauce and take them out of the wok.
