Preparation:
Clean the shrimps. Peel and devein them. Set it aside.
Peel, mince, and cube the spices needed for the recipe.
In a small bowl, make the batter by combining all-purpose flour, egg yolk, salt, ground black pepper, and water. Stir until the desired consistency is reached.
Tips: Water should be added gradually until consistency is reached.Dredge the shrimp in cornstarch, then dip them in the batter mixture and fry them.
Frying:
In a wok or skillet over medium-high heat, heat enough cooking oil to fry the shrimp.
Fry the shrimp until it turns golden brown and crisp. Then remove from the wok and set aside.
The sauce:
If you use the same wok, clean the wok and heat 3 tablespoons of cooking oil for sauteing.
Saute the ginger for a few seconds, then add the garlic and saute until fragrant.
Stir in the ketchup and soy sauce, then add pineapple juice from pineapple chunks in a can.
Add sugar and 2 tablespoons of water. Stir and bring to a soft boil.
Add the capsicums or bell peppers, the pineapple chunks, and the onion cubes. Stir.
Add the slurry mixture and stir. Finally, add the vinegar and cook for about 1 minute before stirring.
Toss the shrimp into the sauce and take them out of the wok.
