Preparation:
Clean the tahong or mussel, remove dirt, wash it under running water and drain.
Peel, chop, strip, and slice the spices and vegetables needed for the recipe.
Cooking:
Heat cooking oil in a pot over medium heat. Saute the garlic, onion, and ginger until limp and fragrant. Then add the tomato and cook until it is soft.
Add fish sauce and stir. Add water and bring it to a soft boil.
Once the liquid has started boiling, add the tahong (mussels), cover, and cook for 5 minutes.
After 5 minutes, open the lid and season with salt and pepper to taste. Stir
Note: Fresh tahong or mussels are salty; please adjust the amount of salt according to your preference.Add the bok choy stem, cook for a few minutes, then add the bok choy leaves. Cover again and cook for 2 to 3 minutes, or until the vegetable is cooked.
Remove it from the heat and serve it hot.
