  1. Grill the eggplant until slightly softened and the skin turns almost black.

  2. Let the eggplant cool down, and then peel off the skin. Set aside.

  3. In a bowl, crack eggs. Add minced onion, salt, pepper powder, and a pinch of seasoning granules to taste. Beat it well to combine.

  4. Place the eggplant on a flat surface and flatten the eggplant using a fork, leaving the stems intact.

  5. Dip the flattened eggplant into the beaten egg mixture.

  6. In a pan, heat cooking oil and fry the eggplant that has been dipped in the beaten egg mixture. Fry both sides for about 3-5 minutes on medium heat.

  7. Transfer to a serving bowl.
