Tortang Talong is a dish made of grilled eggplants and a mixture of beaten eggs. It is easy to make and made with simple ingredients. This is a budget-friendly dish and is so nutritious. It is also best eaten with warm white rice.

  1. Grill the eggplant until slightly softened and the skin turns almost black.

  2. Let the eggplant cool down, and then peel off the skin. Set aside.

  3. In a bowl, crack eggs. Add minced onion, salt, pepper powder, and a pinch of seasoning granules to taste. Beat it well to combine.

  4. Place the eggplant on a flat surface and flatten the eggplant using a fork, leaving the stems intact.

  5. Dip the flattened eggplant into the beaten egg mixture.

  6. In a pan, heat cooking oil and fry the eggplant that has been dipped in the beaten egg mixture. Fry both sides for about 3-5 minutes on medium heat.

  7. Transfer to a serving bowl.

  8. Serve, share, and enjoy eating. It's best eaten with warm rice.
