Preparation:
Prepare the chicken breasts: remove the skin, wash them, drain the water, and pat them dry. Slice them into cubes. Set aside.
In a large mixing bowl, combine the buttermilk, egg, hot sauce, salt, and pepper to taste. Add the flour and cornstarch, then whisk until the batter consistency is reached.
Dip the chicken into the mixture, and then dredge it in the breadcrumbs, pressing gently to coat. Arrange them in a tray and repeat until all are finished and ready to fry.
Cooking:
In a frying pan, pour in enough cooking oil to fry over medium-high heat.
When the oil is hot enough, add the coated chicken to the pan and cook for about 2-3 minutes, or until evenly golden and crispy.
Note: Don’t overcrowd the pan, and fry the coated chicken in batches to keep the temperature of the oil consistent.Once cooked, transfer to a paper towel-lined plate. Toss with bang bang sauce before serving, or keep it plain.
