  1. Trim spare ribs by removing all silver skin. Cut off the rib tips. Cut the slab into individual ribs. Wash and drain.

  2. Arrange the pork ribs in a cooking pot and add vinegar, soy sauce, garlic, peppercorns, bay leaves, and pour in water. Cover lid.

  3. Bring to a boil. Once it starts boiling, adjust the heat to medium-low. Simmer for 30 minutes or until the meat is soft and cooked.

  4. Once the meat is tender enough, remove it from the boiling water and put it on a plate. Keep the pork stock and use it for your next recipe, like chop suey or pancit.

    Note: Refrigerate the stock if not immediately used.
  5. Prepare the coating mixture. On a large plate, combine flour, cornstarch, salt, and ground black pepper. In a separate bowl, crack and beat fresh eggs.

  6. Dip the rib pieces in the beaten eggs one by one and dredge in the flour mixture. Repeat until all are finished.

  7. While coating the boiled pork ribs, heat oil in the fryer or skillet. When the oil is hot enough, gently drop, one by one, the coated ribs. Fry them for about 3 minutes on both sides or until they turn golden brown.

  8. Transfer them to a plate lined with paper towels to remove excess oil.

    Serve with a dipping sauce of your choice.
