Preparation:

  1. Peel and chop the onion, garlic cloves, and green onion leaves.

  2. Crack four pieces of eggs into a bowl. Add a pinch of salt to taste, then beat well.

Cooking:

  1. Heat cooking oil in a pan over medium-low heat. Pour in the beaten eggs. Allow it to cook a bit, then scramble it and set it aside.

  2. In the same pan, heat 2 to 3 tablespoons of cooking oil. Saute the garlic until light brown and aromatic. Add the onion and saute until soft.

  3. Add the cooked rice and mix well.

  4. Add soy sauce and mix to distribute the soy sauce throughout the rice.

  5. Add sesame oil; this will add more flavor to the fried rice.

  6. Add frozen diced carrots (I used store-bought carrots). Mix well.

    Note: If using fresh carrots, it is better to pan-fry them before adding them to the fried rice.
  7. Add a pinch of salt and ground black pepper. Mix thoroughly.

  8. Add the chopped green onion and mix well.

  9. Add a pinch of sugar if desired; sugar will help to balance the taste of the fried rice.

  10. Taste it and adjust as necessary. Turn off the heat.

    Transfer to a serving dish and serve warm. Share and enjoy!
