Wash and peel off the papaya skin, then shred it. Do the same with carrots.
Thinly slice the ginger and onion lengthwise.
Crushed the peppercorn and bay leaves.
In a mixing bowl, combine all the prepared ingredients mentioned above. Then add the vinegar and chili’s then mix.
Keep soaking it for 5 minutes, then strain it and separate the vinegar.
In a mixing bowl, add the ring-sliced ampalaya. Season the atsarang papaya with salt, sugar, and ground black pepper. Taste and adjust according to your preference.
Serve and enjoy it or preserve it with a glass container and seal it properly.
