  1. Wash and peel off the papaya skin, then shred it. Do the same with carrots.

  2. Thinly slice the ginger and onion lengthwise.

  3. Crushed the peppercorn and bay leaves.

  4. In a mixing bowl, combine all the prepared ingredients mentioned above. Then add the vinegar and chili’s then mix.

  5. Keep soaking it for 5 minutes, then strain it and separate the vinegar.

  6. In a mixing bowl, add the ring-sliced ampalaya. Season the atsarang papaya with salt, sugar, and ground black pepper. Taste and adjust according to your preference.

  7. Serve and enjoy it or preserve it with a glass container and seal it properly.
