Beef Caldereta with Sprite: A Sweet-Savory Filipino Comfort Classic

Elevate your caldereta game with this unforgettable Beef Caldereta Recipe with Sprite—where the fizzy soda works magic to tenderize the beef while adding a hint of citrusy sweetness to the rich tomato sauce. This crowd-pleasing stew combines fall-apart tender beef, hearty vegetables, and a velvety sauce with layers of flavor that make it perfect for both special occasions and cozy family dinners.

Why This Caldereta Stands Out:

🍖 Ultra-Tender Beef – Sprite’s acidity helps break down tough fibers, ensuring melt-in-your-mouth meat
🍅 Complex, Balanced Sauce – Tomato paste, liver spread, and Sprite create a sweet-savory depth
🧀 Cheesy Indulgence – Grated cheddar melts into the sauce for extra creaminess

The Sprite Secret:

The soda isn’t just a tenderizer—it adds:
Caramelized sweetness (no need for sugar!)
Bright citrus notes (from lemon-lime flavor)
Silky sauce texture (thanks to carbonation)

Easy Steps to Caldereta Bliss:

  1. Sear beef chunks until browned for maximum flavor
  2. Sauté aromatics (garlic, onions, bell peppers)
  3. Simmer with Sprite + tomato sauce for 1.5 hours
  4. Add veggies (potatoes, carrots, olives)
  5. Finish with cheese for that signature creaminess

Serving Ideas:

🎉 Fiesta Favorite – Serve with warm pan de sal for soaking up sauce
🍚 With Steamed Rice – The classic Filipino way
🍷 Wine Pairing – A bold red like Cabernet Sauvignon

Pro Tip: For extra richness, stir in 2 tbsp peanut butter at the end!

This recipe proves caldereta doesn’t need to be complicated—just smart shortcuts (hello, Sprite!) and patience for tender beef. One bite of the meaty, cheesy, slightly sweet stew and you’ll understand why it’s a Philippine party staple.

Instructions

  1. Cut the beef into 2-inch cubes and then put them into the pot.

  2. Add enough water to cover the meat, then add salt and peppercorns. Bring the liquid to a boil and simmer until the meat gets tender.

Note: Add more water as needed until the meat gets tender.
  3. Meanwhile, prepare the vegetables and spices needed for the recipe.

  4. On a separate pan or pot, heat a small amount of cooking oil enough to fan fry the vegetables.

  5. Once the oil is hot enough, add the potato and carrot, and fan fry until the sides have browned. Take out and set aside.

  6. In the same pan, saute the onion and garlic until aromatic. Then add the boiled beef meat, stir to combine, cook for 2 minutes, and stir in the Sprite soda drinks.

  7. Add the liver spread, stir to mix well, and then add the hotdog slices. Cover the lid and cook for 5 minutes.

  8. Add the tomato sauce, stir, and cover again. Allow to cook for another 5 minutes until the liquid is lightly reduced.

  9. Add the pan-fried potato, carrot, and bell pepper. Mix and simmer for 5 minutes, letting the liquid evaporate until the desired amount of sauce has been reached. Often mix it.

  10. Taste it and adjust it as necessary; add salt and pepper to taste.

  11. Transfer to a serving dish. Serve with a pair of steaming rice. Share and enjoy the food.

    Happy cooking!
