  1. Wash to clean the tahong (mussels), then soak in the water for about 20 minutes.

  2. In a pan, heat 2–3 tablespoons of cooking oil over low–medium heat. Then add the butter and let it melt completely.

  3. Add the minced onion and saute until translucent and soft, then add the minced garlic and saute until fragrant.

  4. Add the tahong then season with salt and pepper powder. Stir and continue cooking, then season with your preferred seasonings. Or you may use sugar to balance the taste.

  5. Simmer until the shells open. Stir, then taste. Adjust the taste accordingly.

  6. Add finely chopped onion leaves (sibuyas dahon) or scallions.

  7. When it's cooked, turn off the heat and transfer it to a serving bowl or plate.
