  1. Preheat the oven to 390°F. Prepare the muffin molds.

  2. Peel and grate the carrot; also peel, core, and grate the apple.

  3. In a large mixing bowl, combine the dry ingredients: sift the flour, baking soda, and cinnamon powder.

  4. Whisk in salt and sugar. Add the grated carrot and pecan to the flour mixture. Wisk again to combine.

  5. In a separate mixing bowl, whisk together eggs, oil, and vanilla. Stir the grated apple into the egg mixture. Add to the flour mixture, stirring until the batter is just combined well.

  6. Fill each muffin cup with three-fourths of the batter, then bake in the middle of the oven for 15 to 20 minutes, or until puffed and a tester comes out clean.

  7. Allow the muffins to cool in their cups on racks for five minutes before being turned out to finish cooling on racks.

  8. Carrot muffins last about a week at room temperature in an airtight container.
