Clean and wash the beef innards. Like (lungs, spleen, heart, intestine, etc.). Put them in a large, deep pot, and then pour in enough water to fully submerge the meat.
Add salt to taste and peppercorns, then cover the pot, turn on the heat, and bring the liquid to a boil.
Once the water starts boiling, reduce the heat and simmer for an hour or until the meat gets tender.
Turn off the heat, take out the boiled beef innards from the pot, and allow it to cool down. Then cut them into small pieces or small dice.
In a large pan or wok, heat 3 tablespoons of cooking oil. Saute the garlic until aromatic, then add the onion and saute until soft, then add the ginger and keep sauteing for a few seconds.
Add the beef innards and sauté together with the spices for 5 to 10 minutes, or until the meat turns sear a bit. Add soy sauce, fish sauce, and ground black pepper; stir for a minute.
Add a cup of pineapple juice and ½ cup of water, stir, then cover and cook for 5 minutes.
After 5 minutes, check them, and then add the tomato sauce or ketchup and stir. Then add the chopped chilies and dried bay leaves. Stir and taste it, then adjust as necessary.
Note: Red chili or siling labuyo is optional; add it if you want a spicy taste to the dish.Allow to cook for more minutes, or until the desired sauce is reached. Turn the heat off and transfer to a serving dish.
Garnish with chopped spring onions if desired. Serve warm and enjoy the Champeni (Tsampeni) Batangas Recipe.
