Preparation:

  1. Remove the stalks from the chilies and wash them.

  2. Finely chop the chilies. Set aside.

  3. Peel and mince the garlic.

    Tips: Use food processors if available for a faster result. A blender will do, but don't over-blender them.

Cooking:

  1. In a large pan, heat the cooking oil over medium-low heat.

  2. Add the minced garlic and saute for 10 minutes until it turns light brown.

    Note: It requires regular stirring to evenly cook the garlic. Keep an eye out since they can quickly burn.
  3. Add the red minced chilies and saute with the garlic. Add the seasoning, salt, sugar, ground black pepper. Add seasoning granules to taste if desired.

  4. Keep stirring for 1 to 2 minutes to make sure the seasoning dissolves.

  5. Add the vinegar and allow it to cook for 3 minutes without string to avoid the "raw taste" of the vinegar.

  6. Adjust the heat to low, and then simmer them for 20 to 25 minutes.

    Note: Stir the mixture every 2 minutes. Be careful not to cook it over too high a heat since the garlic can quickly burn.
  7. Once the chili and garlic are cooked, turn off the heat and leave the sauce to cool completely before storing it in a jar.

    Note: You can add more neutral oil to the jar to completely cover the chilies and garlic if they aren't covered in the oil.
  8. Shelf Life of Foods

    This chili garlic sauce will last in a sealed jar for 3 to 6 months or even longer, depending on how you cook it.
