Preparation:

  1. Clean the fish and slice it into serving pieces. Then transfer to a container, season the fillets with salt and ground black pepper, hand mix, and let sit for 5 minutes.

  2. Peel and chop the garlic and onion. Peel and grate the ginger; seeded and cubes the bell pepper.

Cooking:

  1. Heat cooking ¼ cup of cooking oil in a skillet, preferable nonstick. Fry the fillet on both sides until light brown and cooked. Remove from the pan and set aside.

  2. If you use the same skillet, clean it and heat 2 tablespoons of oil for sauteing. Once the oil is hot, add the garlic and saute for a few seconds, then add the ginger and saute together, then add the onion and saute until soft.

  3. Add the carrot, bell pepper, and pineapple chunks, including the liquid, and stir in the ketchup.

  4. Pour in water. Bring to a boil, then season with salt and pepper to taste.

  5. Simmer, covered, until the sauce reduces and becomes slightly thick.

  6. Turn off the heat, then add the fried fish fillet and toss into the sauce. Or serve sauce over the fried fish fillets with a bowl of steaming rice.
