  1. Clean the purple yum (ube). Remove unwanted roots and wash thoroughly under running water to remove dirt.

  2. Put the unpeeled purple yam in a pot and add 2 cups of water. Simmer for 25 minutes, or until it gets soft. Drain it and allow it to cool.

  3. Peel the cooked purple yum (ube) and finely grate it.

    Tips: A blender will do; cube the purple yum and grind finely.
  4. In a large pan over medium heat, melt the butter. And add the condensed milk. Add the vanilla extract and ube food color (if using). Mix well.

    Note: If you plan to substitute the plain condensed for ube-flavored condensed, ube food color is not necessary.
  5. Lower the heat and add the cooked grated purple yum (ube) to the pan.

  6. Mix to combine the ingredients for about 25 minutes.

    Note: Constant mixing is required until the mixture becomes sticky and slightly dry.
