  1. Wash the sweet potatoes (kamote). Peel and cut about ½ to 1 inch thick into round slices or any desired shape.

    Note: If not cooked immediately, it is better to soak the cut sweet potatoes in a bowl of water to prevent darkening.
  2. In a fryer or a deep pan, add cooking oil and turn the heat on to medium-high. Let the cooking oil heat up, then add the sweet potato slices.

  3. Fry the sweet potato slices until they change color and the outside starts to get crispy. Then put in the brown sugar; regular stirring is required until it turns into caramel, and toss the sweet potatoes until well coated with caramelized sugar.

  4. Remove the sweet potatoes from the pan. Skewer them directly with a bamboo skewer if desired. Do it while it is still hot. It will start to harden as it cools down.

  5. Serve it sweet, warm, and crispy. Enjoy.
