Preparation:
In a large mixing bowl, sift the all-purpose flour. Add the baking powder and sugar, and then mix until well combined. In the center, make a well and set it aside for awhile.
In a separate bowl with the milk, crack the fresh eggs and add vanilla; then whisk all the ingredients together until combined. Then pour the mixture into the flour mixture. Whisk until just combined.
Cooking:
Over medium heat, heat a large nonstick frying pan.
Grease the pan with butter or spray it with cooking oil.
Scoop ¼ cup of the batter mixture per pancake.
Cook each pancake for 2 minutes, or until bubbles develop on the surface.
Flip the pancake and cook for another 1 to 2 minutes, or until it is cooked through.
Take it out of the pan and place it in the container with the lid on to keep it warm.
Note: Grease the pan with butter or cooking oil between batches.Repeat the process until all the batter is done.
Once done, assemble the pancakes on a serving plate and serve with extra butter or margarine and maple syrup.
