Pork Afritada is a family favorite, with tender pork, carrots, potatoes, and a thick tomato sauce. Green peas, cubed tomato, and bay leaves are also included in this recipe. Season to taste with black pepper, salt, and sugar. This recipe is good to prepare on a special occasion or on a regular day. This dish is simple to prepare and delicious to eat with a cup of warm rice.

  1. In a pan, heat cooking oil over low to medium heat.

  2. Saute chopped garlic until aromatic.

  3. Add the chopped onion and saute until soft and translucent.

  4. Add the tomato cubes and saute everything together.

  5. Add the cubed pork and season with 1/2 teaspoon of salt. Saute until the meat changes color.

  6. Add tomato sauce and mix.

  7. Add water and bring to a gentle boil.

  8. Add the dried bay leaves, followed by 1/2 of the broth cubes. Stir.

  9. Cover lid and simmer for 45 minutes or until the meat is tender.

  10. Add sliced hot dog, small carrot widgets, and cubed potato. Cover and continue to cook for another 10 minutes.

  11. Add green peas. Season it with salt, ground black pepper and sugar to taste.Taste and adjust according to your preference. Stir and it's done.
