Preparation:
Pat dry the fish tanigue slices.
Rub salt and pepper to taste on both sides of the tanigue fish slices. Let it sit for 10 minutes.
Peel the garlic cloves and mince them. Divide the onion, slice it into rings, and chop the remaining half.
Cooking:
In a pan, heat 2 to 3 tablespoons of cooking oil. When the oil is hot enough, add the fish and fry until golden brown, about 4 to 5 minutes on each side. Once cooked, remove it from the pan and set it aside.
In another pan or pot, or the same pot, heat 2 tablespoons of oil for sauteing.
Saute the onion rings for a few seconds, then remove them from the pan and set aside.
Saute the garlic until aromatic; add the chopped onion and saute until soft.
Add soy sauce and lemon juice or calamansi juice to the cooking pot. Bring to a soft boil, stirring.
Pour in the water and bring it to a boil. Add sugar and ground black pepper to taste. Stir.
Add cornstarch diluted in water. Stir until the sauce becomes a slightly thick gravy. Taste and adjust as necessary.
Add the fried fish and toss with the sauce, then add the previously set-aside onion rings for topping.
Turn off the heat and transfer the dish to a serving plate.
