Preparation:
Peel and cube the potato, then peel and mince the garlic and onion.
Cooking:
In a pan, heat 2 tablespoons of cooking oil over medium-high heat.
Add the garlic, saute until light brown, and saute the onion until the texture gets soft.
Add the canned corned beef. Stir and continue to cook for 3 minutes. Add the potato cubes to the pan. Cook for 5 minutes, stirring every now and then.
Pour in the water and bring it to a boil. Adjust the heat to low and then continue cooking until the liquid has reduced by half.
Season with salt and pepper to taste.
Note: If you want the dish to be soupy, add more water as needed. Add more salt to taste as the liquid increases.Add the chopped parsley (optional) or substitute parsley for spring onion. Cook for a few minutes.
