Preparation:

  1. Separate kangkong leaves from the stalk, then cut the young stalk about 3 inches long and disregard the sturdier stalks. Wash and drain thoroughly.

  2. Slice the pork belly into strips and set it aside. Peel the garlic and onion and chop them.

Cooking:

  1. In a pan, heat cooking oil over medium-high heat. Fry half of the garlic until toasted, then remove it from the pan.

  2. In the same pan, add the onion and saute until soft. Add the remaining garlic and saute until aromatic.

  3. Add the pork strips, cook and stir until the fat starts to render and the color turns lightly browned.

  4. Add the soy sauce and stir. Continue cooking. Lower the heat, then add the vinegar. At this time, let it simmer for 3 minutes without stirring to keep the acid taste of the vinegar.

  5. Add ½ cup of water, cover and simmer until the meat is fork tender.

    Note: Add more water as needed to get the meat tender.
  6. When the meat is tender enough, increase the heat to medium high, then add the kangkong stalks and cook for about 3 minutes. Stir regularly and season with salt and pepper to taste.

  7. Add the kangkong leaves, stir, and continue cooking for another minute until the sauce turns slightly thick.

  8. Remove from the heat, transfer to a serving plate, and top with the previously cooked, toasted garlic.
