Preparation

  1. Chop the onion and garlic into small pieces, then cut the sitaw or string beans into 2 inch pieces.

    Tips: Cut the sitaw into uniform lengths to ensure even cooking.
  2. Wash and slice the pork belly into small pieces then proceed to cook.

Cooking

  1. In a pan or wok, over medium heat, put the pork slices. Stir it occasionally until it's lightly browned and the fat renders from it.

    Note: If the fat rendered from the meat is insufficient for sauteing, add a small amount of cooking oil.
  2. Make a free space for sauteing. Add the chopped onion and garlic and saute until aromatic. Then saute them altogether with the meat.

  3. Mix in the soy sauce and brown sugar to taste.

  4. Add 1/2 cup of water. Cover and cook until the meat is tender.

    Note: Tenderizing the meat depends on the quality of the meat. Add water as needed until the meat is tender.
  5. When the meat is tender enough, add the vinegar and leave it to boil without stirring.

  6. Add the sitaw or string beans. Mix and cook for 5 minutes.

  7. Season with salt and ground black pepper, to taste. Mix it and taste it. Continue cooking but don't overcook the sitaw. Keep them tender-crisp.

  8. Adjust the taste as necessary. Transfer the dish to a serving bowl or plate.

  9. Serve hot, garnish with fried garlic bits if desired.
