TORTANG SARDINAS
Open the can of sardines and separate the sardines and sauce. In a bowl, mash the sardines using a fork while the sauce must be set aside for later use.
Finely chop moringa or malunggay leaves and add them to the mashed sardines. Add the minced onion and garlic, flour, salt, ground black pepper, and cracked eggs. Mix well to incorporate.
In a pan, heat cooking oil and set fire to low-medium heat. Scoop about ¼ cup of the sardine mixture, and then fry until all is consumed. Cook both sides until they turn golden brown. Use a table napkin to drain excess oil.
SAUCE (Sweet & Sour)
To make the sweet and sour sauce, pour the sardine sauce previously set aside into another pan. Bring it to a soft boil.
Add white vinegar and stir well, then add white sugar and continuously stir.
Add the cornstarch mixture, which is composed of 1 tbsp of cornstarch and 2 tbsp of water. Mix well until slightly thick.
Add chopped spring onion, then serve.
