Yummy Filipino Puffed Rice Ampaw or Ampao
Filipino Puffed Rice Ampaw, also known as Ampao, is a nostalgic and beloved Filipino snack made from puffed rice grains bound together with a sweet syrup made from sugar, water, and sometimes a hint of ginger or vanilla for added flavor. The process involves toasting the rice until it puffs up, then mixing it with the hot syrup until evenly coated. The mixture is then pressed into molds or shaped into small, bite-sized blocks or balls, allowing it to cool and harden into a crunchy, sweet treat. Ampaw is often enjoyed as a merienda (snack) or dessert, and its light, airy texture makes it a delightful contrast to its sugary coating.
This traditional snack is not only a testament to Filipino ingenuity in creating simple yet satisfying treats but also a cherished part of childhood memories for many, often found in local markets, school canteens, or homemade in kitchens across the Philippines.

Ingredients
Instructions
Prepare the cooked rice, or "bahaw," a left-over rice. Separate each grain as you can, then put it under the sunlight for about 4 hours or until it dried out.
In a frying pan, heat the cooking oil. Once hot enough, gently put the sun-dried rice in batches and cook for a few seconds until they get puffy. Immediately remove the puff rice from the hot oil and put it on paper towels. Set aside.
Note: To avoid burning the puffed rice, adjust the heat level accordingly. In a skillet or saucepan, combine sugar, corn syrup, calamansi juice, and salt. Apply heat and keep stirring over low heat or until it reaches the caramel point. Add the butter and stir until melted, then add the vanilla extract and stir.
Add the puffed rice and roasted peanuts and mix until well combined. Transfer the rice mixture to a greased pan or parchment paper. Shape it into puffy balls. For bar shape, use rolling pin to evenly flatten the mixture to 1 inch thick, then cut into bars.
Serve sweet, crunchy, and enjoy!
