  1. In a large bowl, crack 2 eggs, add sugar and salt then beat them well until light and fluffy.

  2. Add coconut milk and melted butter and mix well.

  3. Add baking powder, rice flour, and glutinous rice flour. Mix well and set aside.

  4. Prepare a molder and place a banana leaf through it. Grease banana leaves with butter or oil.

  5. Pour the bibingka batter previously set aside into the prepared molders. Add sliced salted eggs and sliced cheese for toppings.

  6. Bake in a pre-heated oven at 190 C for 20-25 minutes or until golden brown. Remove from oven if cook time is reached.

    If you insert a toothpick in the middle and it comes out clean, it's cooked.
  7. While still hot, grease the cooked bibingka with margarine and add grated cheese as much as you want.

  8. Serve and enjoy eating.
