Clean the galunggong fish, remove the intestines or innards. Make slits on both sides of the fish.
In a pan, arrange half of the sliced kamias, ginger, onion, tomato, and crushed garlic. Then place and arrange the galunggong fish. Sprinkle some salt and ground black pepper to taste.
Add the remaining half of the sliced kamias, ginger, onion, tomato, and crushed garlic on top.
Pour in the calamansi juice and water and put in the long green chilli.
Cover the pan and cook it for 5 minutes over low to medium heat.
Taste and adjust, add seasoning and salt as necessary. Baste the sauce onto the fish while cooking to distribute the flavor.
Cover the pan again and simmer for 20 to 25 minutes over low to medium heat until the fish is fully cooked or until soft and tender.
