Preparation:
Wash and drain the water thoroughly, then put the pork spare ribs in a large bowl with a lid.
Extract fresh calamansi or lemon juice, then add it to the meat.
Add the soy sauce, oyster sauce, ground black pepper, and garlic powder. Mix them well.
Allow the meat to marinate for at least an hour. Put in the fridge if marinating overnight.
Separate the pork ribs from the sauce before cooking.
Peel and mince the garlic, and slice the onion into rings.
Cooking:
Heat cooking oil in a large skillet. Pan-fry the spare ribs in batches.
Cook them on both sides until the color changes to brown with lightly toasted edges. Then remove it from the pan and set it aside.
In the same pan, saute the garlic until light brown and aromatic, then put back the pan-fried pork ribs.
Saute for a minute, then add the marinated sauce, mix, and cook for 2 minutes.
Add water and bring it to a boil. Then lower the heat and cover the lid.
Simmer for 40 minutes or until the meat gets tender.
Add the onion ring slices, then cover again and cook for 2 minutes.
Taste the sauce and adjust as necessary before serving.
Serve with a plate of warm rice. Enjoy!
