  1. Clean the dilis, or anchovy fish, removing the head and intestines. Wash and drain it.

  2. In a bowl, crack two eggs and beat them well. Add salt, pepper powder, garlic powder and oyster sauce. Continue to beat until everything is well combined.

  3. Add the cleaned dilis or anchovy fish, a small diced onion, chopped spring onion, cornstarch, and flour. Mix it well to incorporate it.

  4. In a pan, heat cooking oil, then scoop the mixture and form an omelet. Fry both sides over medium heat until it turns to golden brown. Fry until all is consumed.

  5. Take out of the fryer. Use a strainer or table napkin to drain excess oil, then transfer it to a serving plate.

  6. Serve and enjoy your meal. This is best to eat with warm white rice and a sauce of your choice.
