Spanish-Style Sardines: The dish’s main ingredient is a tamban fish; in the Cebuano dialect, we called the fish “toloy.” Making a sardine dish usually requires a pressure cooker to make the cooking process faster. But if you don’t have a pressure cooker, don’t worry, this recipe is for you.

Instead of using a pressure cooker, we use a kawali or pan. The main difference is the cooking time; we need to cook the fish longer to get the fishbones tender. Regarding taste, it is the same: its fatty fish and savory flavor make it perfect to pair with warm rice or freshly baked bread. For later use, you can also bottle this up and consume it later. This homemade Spanish sardines sa Kawali, or Spanish-style sardines, is very delicious. It has a savory flavor that makes it perfect to pair with warm rice.

  1. Clean the fish, remove scales, cut the head and tail, and then remove the innards. Wash them under running water to remove dirt and blood. Drain well and set aside.

  2. Prepare the spices and vegetables.

  3. In the pan, arrange half of the carrot, garlic, whole peppercorn, and seedless olive.

  4. Arrange the tamban fish over them, then add the remaining carrot, garlic, whole peppercorn, and olives.

  5. Add dry bay leaves, red chili or chili flakes, olive oil, vinegar, and water.

  6. Turn on the heat and bring the liquid to a soft boil over medium heat. Once it starts boiling, cover the pan and simmer over low heat for 2 to 3 hours.

    Note: If you want the sardine fishbones to be tender, cook them for roughly 6 hours or longer. Add more water as needed. You may also use a pressure cooker to cook this recipe for just an hour.
  7. Taste the sardine dish and adjust it as necessary. Turn the heat off, then transfer the dish to a serving plate.

  8. Serve and enjoy.

    Note: For later use, put the sardines in a glass jar and pour in the oil, then seal it.
