This homemade Spanish sardines sa Kawali, or Spanish-style sardines, is very delicious. It has a savory flavor that makes it perfect to pair with warm rice.

Clean the fish, remove scales, cut the head and tail, and then remove the innards. Wash them under running water to remove dirt and blood. Drain well and set aside.
Prepare the spices and vegetables.
In the pan, arrange half of the carrot, garlic, whole peppercorn, and seedless olive.
Arrange the tamban fish over them, then add the remaining carrot, garlic, whole peppercorn, and olives.
Add dry bay leaves, red chili or chili flakes, olive oil, vinegar, and water.
Turn on the heat and bring the liquid to a soft boil over medium heat. Once it starts boiling, cover the pan and simmer over low heat for 2 to 3 hours.
Note: If you want the sardine fishbones to be tender, cook them for roughly 6 hours or longer. Add more water as needed. You may also use a pressure cooker to cook this recipe for just an hour.Taste the sardine dish and adjust it as necessary. Turn the heat off, then transfer the dish to a serving plate.
