Fish Escabeche (Escabecheng Isda) – Sweet & Sour Delicious Dish
Description
Escabecheng isda (sweet and sour fish escabeche) is a sweet and sour dish. This recipe is simple to prepare and does not require many ingredients. In this escabeche version, we added a soft drink to our list of ingredients. We all know that cola softdrinks are sweet in taste. Their sweetness brings an extra ordinary flavor to the dish. Escabeche is a popular dish for special occasions. It has a delightful sweet and sour flavor that goes well with a cup of warm rice.

Preparation:
Clean the fish, remove scales and innards, and cut the fish's gills. Wash thoroughly.
Make a cut at the back to separate the flesh from the bones. Debone them, and then make a few cuts on both sides of the fish flesh. Set aside and prepare the spices for the recipe.
Cooking:
Heat cooking oil in a pan, gently put the fish in, and fry over medium heat. Pour hot oil on top of the fish until it is cooked. Remove it from the heat and set it aside.
In another pan, heat 2 tablespoons of cooking oil over medium heat. Saute the garlic until aromatic, then add the onion and saute until soft, then add the ginger and keep sauteing for a minute. Add the tomato slices and cook until soft.
Stir in the annatto powder, add the carrot, and keep cooking for a few minutes.
Add the sprite, vinegar, and soy sauce and bring the liquid to a soft boil. Stir in salt and pepper powder to taste.
Add the green chili and red bell pepper and stir. Keep cooking for a few minutes.
Add sugar to taste and stir in the slurry mixture. Simmer over medium-low heat until the sauce turns into lightly thick gravy.
Stir, taste it, and adjust as necessary. Add spring opinion and stir. Turn off the heat.
Pour the sauce over the fried fish. Serve and Enjoy!
