Instructions
Preparation:
Prepare the galunggong fish by removing the innards, making slits, then washing and draining it.
Rub salt all over the fish. Let it sit for at least 5 minutes.
Meanwhile, prepare the dipping sauce (sawsawan), a spicy toyomansi.
Cooking:
Heat enough cooking oil in a frying pan. Once the oil gets hot, add the fish one after the other.
Fry until one side of the fish gets brown and crispy. When the cracking sound from the pan almost disappears, you'll know the fish is ready to flip to fry the other side.
Turn the fish over to fry the opposite side.
When cooked, remove the fish from the pan. Let the oil drip. Use a strainer or paper towel to adsorb the oil.
Arrange on a serving plate, paired with any vegetable salad if available.
Serve with spicy toyomansi or any preferred dipping sauce.
