Instructions

  1. Combine the soy sauce, rice wine, chicken bouillon powder, white pepper powder, sesame oil, and cornstarch in a large mixing bowl, then marinate the pork in it. Add additional cornstarch and mix until the pork looks like powdered donuts.

  2. Preheat the cooking oil in a pan and deep fry the pork. Break apart any pork sticking together. Set aside cooked deep-fried pork.

    Don't overcrowd the fryer with too many pieces, or it will lower the oil's temperature, causing sticking and a mushy fried texture.
  3. In another pan or wok, heat cooking oil. Stir-fry sliced bell peppers, minced onions and garlic. Add chicken stock or water. This will serve as the base of the sauce.

  4. Add soy sauce, vinegar, sugar, ketchup and hoisin sauce. Combine thoroughly. Add the cornstarch mixture. Simmer and let the sauce reduce to your liking consistency and adjust seasoning to taste.

  5. Add the cooked pork. Mix and toss everything.

  6. Add the pineapple. Don't overcook them if you want them plump and juicy.

  7. Remove it from the heat and transfer it to a serving bowl.
